Soboutargue Bottarga France

So'Boutargue is not the story of the company created in 1820 from Father to Son; but rather a tale of modern times. If I hadn't gotten pregnant, chances are that So'Boutargue could never have seen the light of day. It all started when I was expecting my second child in Israel.

Crazy cravings for bottarga tormented me and by chance, strolling around the fishing port of Ashdod, I was able to find a few pockets of mullet eggs.

Neither one nor two, I bought some and called my father Gerard to find out the recipe. With my pregnant woman's "nose", I decided to make the bottarga less salty and more fluffy (I like when it sticks a little in the teeth but not too much).

Frustrated at not being able to make myself a little shot of Boukha during aperitifs, I had the crazy idea of ​​refining the bottarga in brandies like Pastis, Whiskey or Boukha. 

It's a bit like Rum flavored cake, the taste remains without the alcoholic content.

And what an idea! Notes of dried figs and sunshine for those with Boukha, freshness at the start of the mouth for those with anise and an astonishing roundness for those with whiskey.

To complement the little anecdote, my daughter Liv came into the world with a redhead, bottarga orange.

Driven by the fervor of my father and my friends, fans of So'Boutargue, I gave up my job as a banker and devoted myself to making these precious egg pouches. Faced with the difficulties of the adventure, I asked my father for help (a family company from daughter to father). This is how, with children and husband and settled in Cotignac, France - in the middle of vineyards and olive trees, a dry stone village, endowed with a thousand-year-old Jewish history.

So'Boutargue was born in 2017.
