Its Fine Bottarga made in France, the prized mullet roe from the Mediterranean Sea, sustainably fished, revered for its intense and distinct flavors. 

OUR BOTTARGA
Fruit of the sea and the sun, our bottarga* is a traditional and sustainable product prepared using an artisanal method passed down from one generation to the next. It is made with wild fish roe, hand cured with organic salt and dried in the air of Provence and then finely coated with a thin layer of bee’s wax. Our bottarga has a rich aroma that gives its signature taste.

    So'Boutargue is a family-owned business founded by a woman, Elodie, when she was pregnant with her second child.

    Elodie had a strong craving for bottarga. As she wandered by the fisherman's stalls at the Ashdod seaport, she found some Mullet roe with its color like gold and its flavor like the sea. She knew, then, that this was what she had been looking for: the perfect ingredient for her bottarga. With the help of her father, Gérard, she made the first bottarga a few hours later.
    A gift from the sea and a culinary treat, Elodie developed all of her original recipes with the love of a mother for her child. To add to the anecdote, Elodie’s daughter, Liv, was born with a head of fiery gold-orange hair, the color of bottarga.

    Unique flavors

    Elodie had the brilliant idea of infusing bottarga with brandies like Pastis, Whiskey, or Boukha. The result was brilliant, a bit like Rum-flavored cake, with all the flavor but none of the alcohol. And what a great idea! Boukha-infused bottarga has notes of dried figs and sunshine which is reminiscent of Provence on the summer, anise-infused bottarga has a refreshing start and whiskey-infused bottarga has an astonishing roundness with amber tones.

    A natural and sustainable product

    Bottarga is a natural product that is rich in omega-3 fatty acids, protein and other nutrients.

    It is a naturally gluten-free food, that does not contain any preservatives or chemicals. This makes it a highly recommended choice by nutritionists and Keto adepts.
    So'Boutargue uses only the highest quality of eggs only from sustainable coastal fishing in the Atlantic off the coast of Mauritania. The mullet eggs are carefully selected according to their size and superior quality: smooth, shiny with a deep orange-gold color as well as free of tears or blemishes.
